Louisa Farhat founded Sweet Lou’s Craft Sausage & Butchery with Tim Dubay after more than a decade of experience as a butcher and chef.

Louisa has developed sausage and charcuterie programs for a number of restaurants and butcher shops in Chicago and Minneapolis- always with a commitment to sustainable and local whole animal butchery.

Tim has worked in many of the top restaurants around the twin cities for the last 15 years. His talent and creativity drive the food truck’s seasonal menu.

You can find us around town on the truck, at farmers markets slanging retail sausage packs, or hire us for a unique and custom catering experience.
