Meet Tim
Tim Dubay is the Co-Owner and Executive Chef of Sweet Lou’s Meats. Born in Winterville, a small town in Northern Maine. His mom’s fondness for shopping malls and Polaris snowmobiles brought them to Minnesota when he was 10. At 14, he got his first job, working in one of the food buildings at Valley Fair. Realizing that the energy of the restaurants and being in the kitchen drove him, he opted to make a career out of the job he fell into as a kid. Like his business partner, he’s committed to bringing sustainable, quality food to the community. Tim has worked at many of the Twin Cities' top restaurants in the past 15 years. His talent and creativity drive the food truck’s seasonal menu.
What excites you most about opening the shop in St. Louis Park?
I’m really proud of my time in the Twin Cities food scene. I’ve worked at some truly wonderful places, but I am most proud of Sweet Lou’s. There’s something pretty special about creating something that’s all of your own, and that the community truly loves. For us to finally have a location to call home, that feels amazing. We’re so grateful for all of our family and friends (old and new) who have supported this journey. We’re happy we can continue to serve everyone who’s been with us from the beginning and keep growing Sweet Lou’s to better serve everyone!
What is your philosophy in cooking? What excites you most about feeding the community?
It’s cliché, but it’s simple: it starts with quality ingredients. I want everyone who eats our food to know we’ve put the utmost care into sourcing our ingredients, crafting our recipes, and cooking the food they're eating. Knowing the intention we put into everything we do and seeing folks excited to eat it is a pretty incredible feeling.

We put the animals first.
Ethical animal husbandry is at the core of our business. The farmers we work with share these values and are committed to the health and sustainability of their herds.

We’ve cultivated relationships with local vendors to keep the distance from the farm to your table minimal. Everything you find in The Shop is MN-based.
